Fresh Flounder with Greek Couscous Salad



This meal turned out to be super easy and delicious! Definitely great for a quick weeknight meal! 
We had to tweak it a bit since we could not find triggerfish at Earthfare, so we used flounder instead!
Just a tip...just get one filet, we got 2 and we could only eat one of them they are huge!!

Step 1: Since everything cooks very quickly its best to cut your tomatoes first! Just dice about 1 1/2 cups of cherry tomatoes 


Step 2: Make your seasoning for the flounder filets!
You will need:
1/4 cup olive oil
1/4 tsp sage
1/4 tsp thyme
1/4 tsp parsley


Whisk all your olive oil and seasoning together in a bowl


Step 3: Take out your flounder filets! (See how big they are?)
You can use either a broiler rack and cover it with foil or just a regular baking sheet with foil


Pour half of your seasoning mixture on each filet and spread it evenly (See below) and season with salt and pepper on top!


Step 4: Preheat your oven to broil or 550 degrees, cook fish for about 8 minutes till white and flaky

Step 5: Take out your package of whole wheat couscous 
I like the Near East Brand of Roasted Garlic and Olive Oil Whole Wheat Couscous
You will need:
1-1/2 Cups water or chicken broth 
1/2 Tsp salt (optional)
 1 Tbsp olive oil  

 In medium saucepan, bring water, salt (optional) and olive oil or butter to just a boil. 
 Stir in couscous then cover with lid and remove from heat
Let stand 5 minutes then fluff couscous lightly with fork 


Step 6: Add 1 1/2 cups diced tomatoes, a 1/2 cup of crumbled feta, 1/2 tsp lemon juice to your couscous
Stir and it should look like the picture below


Step 7: Don't forget about your fish! Take it out of the oven and it should look like the picture below! Sprinkle a little paprika on top to give it extra flavor!


Now you are ready to serve dinner!!
